I’m going to be honest with you- unless you have your own nut trees this recipe will probably have nothing in it from your garden. It is however, something I love to enjoy with my homegrown summer berries and a good dollop of yoghurt. If you freeze some of your berries to enjoy during the winter months then you can enjoy this year round. It really is such a treat. You can mix up the nuts if you so wish, perhaps swapping in some hazelnuts would be good too. Use whatever nuts are available to you, just make sure the total weight is equal to the nuts in this recipe.
Ingredients
400g jumbo rolled oats
50g pecans
50g walnuts
50g cashews
50g slithered almonds
50g chia seeds
75g sunflower seeds
75g pumpkin seeds
2tsp ground cinnamon
40g coconut oil
40g honey or other liquid sweetener of your choice
Pinch of stevia – optional but recommended.
Method:
1. Gently melt the honey and coconut oil together and mix in the stevia if using.
2. Roughly chop all the nuts and combine them with the rest of the dry ingredients in a large bowl.
3. Combine the honey and oil with the dried mixture and mix well.
4. Spread the mixture out on two large baking trays and bake at 150c for 8-10 minutes. Give it a stir and swap the trays around so the one that was on the bottom is now on top, and bake for a further 8-10 minutes. Make sure you keep a close eye so it doesn’t catch if it needs longer than 8 minutes each time.
